I stumbled upon this recipe by chance one afternoon. I was looking in my fridge for something to eat, I moved the milk over and BAM! A pound of green beans just about hit me in the face. I was planning on making them for a meal a few nights ago, and obviously things changed. If you have ever left green beans in the fridge for too long they tend to get really soft, so I knew I had to eat them. I continued to look in my fridge for some masterful combination to come at me like those green beans.
5 oz fresh green beans, trim off ends
1/2 oz roasted almonds, cut in half
1/2 oz feta cheese, crumbled
1 tsp olive oil
salt & pepper, to taste
2 tsp balsamic glaze (if you do not have balsamic glaze, add 1/4 C balsamic vinegar to a sauce pan on low heat, keep at a simmer and reduce until it has the consistency of syrup, about 10min, keep stirring)
I continued to look in my fridge for some masterful combination to come at me like those green beans. Then it came to me! FETA! I love cheese and just a sprinkle of cheese can transform a dish for me. I had also remembered that I just made balsamic for a dish last week. Lastly, everything needs a little crunch! I am a sucker for this dish, especially on a day I want a healthy lunch, or as a side to a delicious meal.
Step by Step Instructions
In a medium sauté pan, heat oil over a medium-low flame. When oil is hot, add green beans. Sauté until tender, 5-6 minutes, and take off heat.
Toss in feta, almond, salt and pepper. Drizzle with balsamic glaze.
