Glazed Rainbow Cooked Carrots Recipe

Carrots are not only good for the eyes, but rainbow carrots are easy on the eyes too.  These rainbow carrots are glazed in a savory-sweet thyme brown butter.

Carrots are a great universal ingredient that can either be sweet or savory.  Why not combine the both?! My husband always tells me he want to try more food and glazed carrots is one of them.  He always thought of them as a mushy, flavorless vegetable that his mom used to make him.  Not anymore!  Glazing carrots with fresh herbs embraces the fresh carrot flavors while the honey gives it a touch of sweet it needs.

  • 4 Rainbow Carrots, peeled
  • 1 1/2 Tbs Butter
  • 1 1/2 tsp Honey
  • 1/8 tsp Garlic
  • 1/2 Fresh Thyme
  • Salt & Pepper, to taste
  • Garnish with extra Thyme
Peeling carrots can be tricky, but theres an easy way of doing it! Just lay the carrot down flat on cutting board, or other hard surface, and with one hand hold the carrot and the other hand the peeler and go at it!  While holding the carrot, slowly rotate without lifting the carrot off the board.  With rainbow carrots, the scraps look good enough to eat too! Just wait and see 🙂

Step by Step Instructions

Step 1

Preheat oven to 375 degrees.  On a small sheet tray, place down a layer of parchment paper.  Place carrots, not touching each other, on the tray.

Step 2

In a small sauce pan, add butter on medium-low heat.  Let simmer and bubble stirring frequently until the butter turns brown (about 5 min), it will smell nutty.

Step 3

Take off heat and stir in honey, thyme and garlic powder.  Drizzle over carrots, coating on all sides.  Sprinkle with salt and pepper.

Step 4

Bake in oven for 20-30 minutes, turning carrots over at 14 minutes.  Depending on the thickness of the carrots, the longer they may need to cook for.  They will be done when you can nicely pierce it with a fork.
