Cast Iron Macaroni & Cheese
Macaroni and cheese is a recipe everyone should have in their kitchen! Husbands, wives, boyfriends, girlfriends, children, grandparents, EVERYONE loves mac and cheese. It took me a while to find my favorite recipe and this is definitely the one!

I do not know a whole lot of people who do not like mac and cheese and I feel like it is a staple dish for many children. But this is no Kraft, this is decadent, creamy, oohhy gewy, cheesy sauce smothering this soft, pillowy pasta.
4 oz sharp cheddar cheese, shredded
3 oz Velveeta cheese, cubed
3/4 C milk (2%)
3/4 C heavy cream
2 Tbsp butter
2 Tbsp flour
1/2 tsp salt
1/4 tsp black pepper
3/4 tsp dry mustard
1/16 tsp nutmeg (It is difficult to measure this, so I recommend lightly sprinkling some on top)
8 oz large elbow macaroni (1/2 box), cooked according to directions
Have you ever seen, The Goofy Movie, the scene with cheese whiz or that one part where they are eating the pizza?? So now imagine if that cheese was used to make the mac and cheese lol that is how amazing this recipe is. And there is something amazing about bringing a childhood memory back to life.
Macaroni and cheese has also made me love nutmeg! Nutmeg is one of my new favorite warm spices. I am not a huge fan of really sweet foods, so using nutmeg in anything cheesy or custardy creates an amazing savory-sweet taste. The nutmeg used in this recipe gives an extra dimension of warmth that mac and cheese needs in order to stand out.
Step by Step Instructions
Preheat oven on broil. In a cast iron (or regular oven-safe) skillet, melt butter over medium-low heat. Whisk in flour and cook, stirring frequently, for about 3 minutes.
Slowly whisk in cream, then milk until smooth. Next, add salt, pepper, mustard and nutmeg. Cook, stirring frequently. The sauce will begin to thicken (3-5 min).
Stir in Velveeta and 3/4 of the cheddar cheese until melted and smooth. Remove from heat and gently mix in cooked pasta.
Sprinkle with remaining 1/4 cheddar cheese. Place in oven to broil for 5-7min or until lightly golden brown.
Jut a pinch (1/16) of nutmeg is all you need!
Cut the Velveeta into small cubes so everything melts evenly.
